Although I don't like to admit it, sometimes with our busy lifestyle, we tend to eat out more than we should. We don't mean to, but when we have had a day full of running errands and classes and who knows what else, we just want dinner NOW. I have some quick recipes up my sleeve, I will be getting to those shortly, (so keep posted) but sometimes they just aren't quick enough.

When this happens, we tend to not eat as many fruits and vegetables as we wanted to (or should...). This happened to us this past week and I came home to some sad looking bananas. I tried opening one, with full intent on eating it, but it was just too brown and past its prime of when I like to enjoy them. Not wanting to throw them away, I considered freezing them to blend into smoothies, but decided against that as well. Instead, I turned on the oven and got baking!

And these banana muffins were born. Banana bread and banana muffins are quite common, so the recipe is nothing special, but I do like to spice mine up a bit and give them some more flavor. This makes them extra special in my eyes, and apparently everyone else's too since they get devoured wherever I bring them.

Banana Nut (or nut free!) Muffins

Step 1: Preheat oven to 350 degrees and gather ingredients.

4 over-ripened bananas mashed
3/4 cup of sugar
1/2 cup of applesauce
1/3 cup of melted butter
1 tablespoon of vanilla extract
1 teaspoon of baking soda
1 1/2 cups of flour
3 tablespoons molasses
1 tablespoon of cinnamon (more or less to taste)
a pinch of salt
1/2 cup walnuts, chopped (or nut of choice, completely optional!)

Step 2: Thoroughly mash bananas and mix with melted butter.

Step 3: Mix in sugar, egg, and vanilla.

Step 4: Add baking soda and salt and stir.

Step 5: Add flour and mix

Step 6: Add nuts and fold until just mixed in.

Step 7: Pour in greased/lined muffin tin of your choice. (I chose to make regular muffins and mini muffins. This recipe gave me enough batter to make 12 regular-sized muffins and 24 mini muffins.)

Step 8: Bake until muffin springs back when touched.

A few notes!

Add more or less of the cinnamon and molasses if you prefer. I like a lot of flavor, so I add a lot.
Walnuts are my favorite in banana muffins, but you could add chocolate chips or dried cranberries
Add a bit of peanut butter in place of the molasses for peanut butter banana muffins. Yum!
